This red onion and spice confit, slightly enhanced by apple cider vinegar and softened by a hint of honey, is a pure sweet and sour delight. The sweet, round taste of candied red onion is enhanced by a harmonious blend of spices made up of pepper, cinnamon, nutmeg and cloves. Cooked in our workshop in Provence, it is cooked the old-fashioned way in an open copper cauldron, which allows it to keep the texture and flavors of the candied red onion intact.
