“Chez Paul” pays tribute to the youngest member of the family who came to live in his grandparents’ house in the heart of the vineyards. This cuvée is vinified on clay-limestone soils whose 15-year-old vines produce a juice so aromatic that blending it with another cuvée is impossible. We find a very fruity nose with aromas of black fruits, raspberry and some notes of violet. The palate is well structured with melted tannins due to 12 months of aging in 30hl casks. A wine with good length which is made to be enjoyed at beautiful tables!
