Single plot (2 ha 32a 32ca, half in production) of old Grenache noir vines in goblet on the southern slope of a hillock oriented east-west. On clay-limestone base, flow of red-blackish schists and mica-schists, with exceptional iron content. The plot is crossed more than 200 days a year by an icy wind from the northwest. Late pruning. Intensive green work: disbudding, intercropping, load regulation, leaf stripping. Search for perfect phenolic maturity while retaining maximum freshness and fruit. Manual harvest, stored and transported by refrigerated truck. Maceration for 20 days with extraction by gentle daily punching down. Poured into new barrels. Aging on lees, without sulfur until the end of malolactics. Regular toppings with a Mouvèdre/Syrah blend (5 to 7% depending on vintages). Bottled without filtration. An endearing, impressive wine, extremely variable depending on the place and occasion, evolving in the glass for several hours, with breathtaking length and tight, memorable velvety tannins. Maturity 10 years, aging potential 30 years.
