You will have understood, for this vintage, a little play on words between the castle of Etienne Pochon and the town in which it is located, Chanos-Curson.
This is “THE” great white from Domaine Étienne Pochon, made in equal proportions from Marsanne and Roussanne. The latter are planted on a small plot of one hectare enjoying a privileged place within the farm.
Vinification and aging for 4 months on fine lees. This Crozes-Hermitage offers aromas that are both intense, powerful and rich, while remaining very fresh. On the program: sweet notes of white flowers (hawthorn, acacia), ripe white fruits (peach), and on the evolution, honey, toast and hazelnuts. The wine is certainly dry but exquisitely smooth! In short, a white superbly balanced between roundness and acidity.

Food and wine pairings: Serve it relatively cool when young, a little less when mature (around 12°C). Dauphiné ravioli, white fish (hake, cod, monkfish, sea bream, etc.), chicken with cream and morels. After a few years in the cellar, enjoy it with Picodon (goat cheese) or semi-cooked foie gras for example!
