Alcoholic and malolactic fermentations take place in demi-muids, then the wine is aged in 500 liter French oak barrels for 12 to 18 months. This grand cru is a generous, very concentrated wine, which intoxicates at first nose with its elegant and complex aromas of white flowers, fresh butter, vanilla and menthol. On the palate, we delight in white fruits and honeyed notes. The minerality arrives in the finish and brings freshness and liveliness, giving this wine endless persistence... It is the light color of its soils which gave the name to the climate "Blanchot". It stretches over 12.7 hectares and has a reputation for being difficult to work. Its South-East orientation gives it limited solar amplitude. The sun shines in the morning then turns. Its steep slope and sheltered location allow the grapes to ripen slowly and the harvest takes place later than in neighboring climates. The soils are composed of Kimmeridgian limestone, blue and white clay. All these elements give the wine a singular character, essentially floral and with an evanescent minerality.
