The Coutinaux plot, located north of Fontaine-Denis, is planted with Chardonnay and Pinot Noir by René Collet. Coutinaux is their piece of heart, which they consider to be a unique place where a beneficial energy reigns. The wines ferment in 300 liter barrels for 77% of the volume. Aging on lees lasts 72 months. Extra-raw. The nose evokes a nose of pastry, of yellow fruit tart, crunchy and grilled. The bubbles are fine, the mouth is mineral, dry and chalky. The acidity is lively, on citrus fruits (yellow and green lemon). It's a very fresh champagne with a nice thirst quencher.
